La Bottega del Carmine was born from a legend: it is said that in the garden behind the venue, vegetables and spices were once cultivated and later used by the nearby Convent of Carmine to prepare the finest traditional dishes, served at banquets held in honor of foreign dignitaries visiting our beautiful city.
Since 2018, Michele Parrinello has chosen to revive that ancient tradition, weaving it into the present and future of Sicilian and international cuisine. This vision took on new strength in November 2023, with the arrival of Chef Angelo Genna, whose journey across Italy and Europe in search of inspiration and refinement now comes to life in his culinary creations.
